This Monmouthshire wine features deep nectarine and tangerine notes, savoury and herbal. Hand harvested grapes were left as whole bunches, with carbonic maceration for 35 days on skins before pressing. Indigenous yeasts were used and the wine spent 10 months aging in old Austrian oak barrels. Grape: Predominantly Albarino Pair with: Pork, chicken, risotto
